Christmas Morning Quiche: Instant Breakfast

A Christmas morning tradition in my house is always quiche for breakfast. I make it the day before and all I need to do is heat it up in little Cuisinart oven. No time wasted in the kitchen while I miss the tots opening their presents! Then you slice it up and it is easy enough to eat around the tree where all the action is. There are as many recipes for quiche as there are ingredients in the world. Here is the easiest one by Paula Deen, it is spinach and bacon with Swiss cheese. But you can modify it however you want, instead of bacon (which requires pre-cooking) you can use chopped up ham instead. Always use a pre-made pie crust, why mess with success? You can even add prepared hash brown to give it more heft. The only thing you can’t modify is the egg mixture, which is 6 large eggs to 1 and a half cups of heavy cream (if this is too heavy you can use half and half or even milk although it will take longer to bake).

If you want to get fancy, you can sautee anything you want and add it to the bottom of the pie crust, sprinkle with cheese on top and add the egg mixture. Or throw in Christmas Eve leftovers (turkey anyone?). You can have a nice breakfast without any of the work on Christmas morning. Happy Holidays!
